Honey

"My son, eat honey, for it is good" (Proverbs 24:13). Honey is the best known hive product, an ancient food that is also traditionally used for skin care and general support.

How is honey made?

Forager bees bring nectar from flowers back to the hive, visiting 50 to 100 flowers on each trip. In the hive they add enzymes to the nectar, fan it with their wings until most of the water evaporates, and seal it in wax cells.

A single worker bee produces only about 1/12 of a teaspoon of honey in her whole life. Every jar is the work of an entire hive. As we like to say: alone, a bee. Together, a hive.

Types of honey in Israel

The taste, colour and aroma of honey depend on the flowers the bees visited. Common honeys in Israel include wildflower, citrus blossom, eucalyptus and avocado honey, which is darker and stronger. Honey that crystallises has not gone bad. It is a natural process, and gentle warming in a bowl of warm water turns it liquid again.

How is honey traditionally used?

In many traditions, honey with warm water and lemon is used to soothe the throat. It is also used in face masks and skin care products, and as a natural source of energy. In apitherapy it is used alongside other hive products, as part of a natural, complementary approach.

Frequently asked questions

What is the difference between raw honey and regular honey?

Raw honey has not been heated or finely filtered, so it keeps its pollen and enzymes. Commercial honey is sometimes heated and filtered so that it stays liquid and clear for longer.
